In this cold fall weather, nothing tastes better than a warm, hearty bowl of stew.  Our very own Margaret Isernio (Frank’s wife) has a wonderful and easy recipe for Italian Minestra (Vegetable Soup with Sausage & Beans) to share.  We hope you’ll give it a try and let us know what you think!
Italian Minestra
(Vegetable Soup with Sausage & Beans)
Serves 6 – 8 as a main course

This hearty and satisfying stew is a perfect one meal dish for cold winter days.  It’s fast and easy to make with many options for vegetable and bean ingredients. You can basically raid your refrigerator of leftover vegetables and make a delicious stew or soup with a few basic ingredients. You can make it thick or thin, depending on how much chicken broth you add.  It tastes even better re-heated the next day.


Basic ingredients

4 Isernio’s Italian Sausages or 1 lb. bulk roll (Hot or Mild, Pork or Chicken)

2 Tbsp. Olive Oil

1 medium Onion, chopped

2 stalks Celery, halved lengthwise and chopped

1 large Carrot, peeled, quartered lengthwise and chopped

3 cloves Garlic, finely chopped or pressed

1 Tbsp. fresh Rosemary, finely chopped or 1 tsp. dried

1 Tbsp. fresh Sage, finely chopped or 1 tsp. dried

1 Tbsp. fresh Fennel Pollen (Optional)

1 tsp. Red Pepper flakes (omit if using Hot Sausage)

1 15-oz. can Italian style plum Tomatoes, with juice, squeezed by hand or broken up in pot with a wooden spoon

2 – 3 cups low salt Chicken Broth

1 bunch fresh Kale, chopped in 1″ pieces

1 Red or Green Bell Pepper, chopped in 1/4″ pieces

2 – 3 Zucchini, chopped in 1/4″ pieces

1 16-oz. can Cannellini Beans, drained and rinsed in a colander

3 tsp. Salt and freshly ground Black Pepper to taste

4-6 Tbsp. grated Pecorino Romano cheese

Optional Vegetable and Bean Ingredients:

Optional ingredients

1 bunch fresh Chard or Spinach, chopped in 1″ pieces

2 cups fresh Cabbage, chopped in 1″ pieces

1 cup Green Beans, fresh or frozen cut in 1/2″ pieces

1 cup frozen Peas

1 cup frozen Corn

1 cup Squash or Pumpkin, chopped in 1/4″ pieces

1 cup Potato or Yam, chopped in 1/4″ pieces

1 fresh Fennel Bulb, chopped in 1/4″ pieces

1 16-oz. can Garbanzo, Black, Pinto, Red, Adzuki or any type of canned beans



In a large 13 quart pot, heat 2 Tbsp. olive oil over medium heat and add the onion, celery, carrot and cook until semi-soft,10 -12 minutes. Add the garlic, salt and cook 2 minutes.  Add the sausage (remove from casings, if using links), rosemary, sage, fennel pollen and hot pepper flakes (if using) and cook until the meat looses it’s pinkness.


Add the tomatoes with all liquid, breaking them up with a wooden spoon into 3/4 inch chunks.  Add the Chicken Broth and reduce heat to simmer for 10 minutes. While the stew is simmering, clean the kale and chop all the remaining vegetables.


Add all chopped vegetables and simmer for 15 – 20 minutes, until peppers and zucchini are soft. Add the cannellini beans and simmer another 5 minutes. Taste for more salt or pepper needed.


Ladle into bowls and drizzle with extra virgin olive oil and freshly grated Pecorino Romano cheese. Serve with crusty, toasted Italian bread rubbed with garlic and drizzled with olive oil.

This just made our day…

We LOVE getting emails from folks who enjoy our sausage, and today we got an especially wonderful one from Laura in Tacoma, WA that really had us all smiling.  It’s comments like these that really make us feel good about what we do and the products we offer.  Here’s what she had to say:

Greetings Isernio’s,

I just got done making my signiture “biscuits and gravy” for my family after a chilly morning of delivering newspapers. I substituted your “Chicken Breakfast Sausage Roll” and “Hot Chicken Breakfast Sausage” for the usual pork sausage that I have used for years.

The gravy was wonderful and full of flavor. Your sausage rolls cooked up great. I look forward to trying the other flavors in my pasta sauce and on homemade pizzas.

Two really important reasons why I chose your sausage was because of the short list of ingredients that I could recognize and even pronounce. The second reason was the fact that the price was exactly the same as the brand of pork sausage that I was planning on buying.

Thank you for a quality product that really was missing in the marketplace.  A healthy, delicious, afordable addition to our diet.
