Don’t forget about Mom this Sunday!  No doubt she deserves some special treatment – what better way to show her some love by preparing a breakfast in bed or a nice brunch?  One of our favorite recipe sites, Allrecipes.com, has hundreds of wonderful breakfast ideas – using sausage, of course! 

Here is a list from Allrecipes of some great dishes using sausage.  Many of these are so easy that the kids can also pitch in and help.  Use our low-fat chicken breakfast sausage to make it delicious AND guilt-free for Mom!

This article about family dinners caught our eye the other day.  Studies have shown that healthy family meals are important to healthy child development, and moms from different walks of life weighed in on how they try to achieve that family togetherness in their busy lives.

Anybody with kids – whether you’re Mom or Dad – is all too familiar with juggling schedules, work, school, sports, play, family time, etc.  Some days just getting a meal on the table is near impossible.  Trying to make it a healthy, balanced meal (that ALL family members, including picky kids, will eat) can be just plain overwhelming.

So how do you do it?  At Isernio’s we are firm believers in offering healthy and tasty options to kids, and we actually have some very kid-friendly, easy to prepare recipes using our low fat, all-natural sausage.   Here are a few recipes we would recommend trying for low-stress, healthy family meals.  Many of these can even be made ahead and refrigerated or frozen to be reheated for a quick meal later:

If you like things on the spicier side, we have a fantastic brunch dish for you – Baked Eggs Veracruzana.  This would be a great recipe for a festive Easter brunch dish this weekend, or pretty much any day you want to kick up your regular breakfast or brunch a few notches!  (Special thanks to our front desk guru, Curtis, for making and photographing this recipe.  He gives it two thumbs up!)

Here’s what you’ll need:

  • 1 Isernio’s Chicken Sausage Roll (Breakfast or Spicy Breakfast), or 4 links Isernio’s Fresh Chorizo
  • 2 Tb. Butter
  • 8 eggs, large
  • 6 Tb. half n’ half
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 cup sharp cheddar cheese, shredded (or other cheese of choice – Curtis used a mixture of cheddar and pepper jack)
  • 4 oz. can green chiles, drained and chopped
  • Salsa for garnish
  • Tortillas for serving

 

Here’s how to make it:
 


Heat a nonstick 12″ skillet over medium heat.  Slice sausage roll open (or remove casings if using sausage links) and place in skillet.  Break up and crumble sausage with a flat wooden spoon.  Cook sausage until it just loses its pinkness.  Don’t over cook or brown sausage.  Set aside.

Place butter in an 8”- square baking dish, preferably one that is suitable for bringing to the table. Set in a pre-heated 350 degree oven to melt the butter. Shake the pan to distribute the butter evenly.

Slightly beat the eggs, half n’ half, salt and pepper. Pour into the pan and bake at 350 degrees for 10 minutes, or just until the eggs begin to set.

Remove from oven and sprinkle the cooked sausage, shredded cheese and chopped chilies on top of the eggs. Draw a wide metal spatula across the bottom of the pan several times to break up the mixture and incorporate the ingredients.

Place back in oven and bake, breaking the mixture up again several times, for 5 more minutes, or until desired doneness is achieved.

Remove from oven and take directly to table, offering salsa and warm flour tortillas as accompaniments.

Frank was thrilled to be asked to appear yesterday on Seattle television station KING and their daytime talk show New Day NorthwestWith it being the new year and everyone making resolutions to eat healthier, it was great timing for Frank to show the audience and host Margaret Larson how to make a tasty rigatoni dish using our chicken sausage – this recipe is not only delicious (the smells in the TV studio were heavenly), but it’s super easy to make (the hardest part is waiting 25 minutes for the sauce to simmer without digging in!) and using our 95% lean chicken sausage rolls in this recipe makes it guilt-free.

Our favorite part came actually after the taping was over:  One member of the audience asked if Frank drained the sausage before adding it to the sauce.  He showed her the pan in which the sausage had been cooked – there was almost NO fat in the pan to drain.  There were literally “oohs” and “ahhs” coming from the audience.  You have to love it when sausage can elicit such a lively reaction!

It’s our holiday gift to you – the 12 Days of Sausage giveaway!  We’ve been collecting your favorite recipes using our sausage, and drawing winners to receive a FREE box of chicken sausage rolls delivered right to their door!  Today’s winner is Diane M. of Sumner, WA.  Below is her recipe for Chicken Meatballs – what a great idea to use chicken sausage and ground turkey to make a lean AND tasty meatball!  For the sausage, you can use either Isernio’s chicken links removed from the casing, or save a step and use our Chicken Sausage Rolls, either Hot or Mild Italian.  Congratulations Diane, and thanks for the recipe!

Chicken Meatballs

½ pound of ground turkey breast (or try Isernio’s Ground Chicken)
2-3 links of Isernios ground sweet Italian chicken sausage, removed from casing
1 beaten egg
½ tsp Italian seasoning
10 or so leaves Italian flat leaf parsley, minced
Minced garlic to taste
2 tablespoons minced sweet Walla Walla onion
3 tablespoons shredded cheese (provolone or asiago)

Add dried bread crumbs until you get good consistency. Form balls and cook in skillet with olive oil or bake in oven on parchement paper. Great for Italian Meatball soup!

In these busy days leading up to Christmas, sometimes it’s nice to have a no-fuss recipe like this one that can be assembled in the morning and cooked in a slow cooker for the evening’s meal.  Using our low-fat Hot Italian Chicken Sausage makes it a healthy, guilt free meal too!

Here is Oliver’s recipe:

Uncle Bob’s Isernio’s Chicken Chili

  • 1 package of Isernio’s Hot Italian Chicken Sausage (removed from casings, or use the Hot Italian Chicken Roll)
  • 1 can crushed tomatoes
  • 1 can kidney beans, undrained
  • 1  can condensed tomato soup
  • 1 large onion, chopped
  • 2 packages chili seasoning mix
  • Shredded Cheddar cheese

Uncle Bob would put this in a slow cooker early Sunday morning and by lunch time (say 4-5 hours of cook time) we would chow down on this amazing meal.

Tomato Sauce with Medium Hot Isernio’s Italian Sausage

6 Oz. Rotini Pasta
4 Tbls Olive Oil
4 Whole garlic cloves minced
3/4 Cup onions finely chopped
2 – 28 oz can peeled tomatoes
1/2 tsp thyme
10 fresh basil leaves
Salt & Pepper to taste
Parmesan Reggiano
1 lb Medium Hot Isernios Italian Sausage
1/2 cup Red Wine

Prepare Sauce

Heat oil in skillet, cook garlic until browned, add onions.
Reduce heat to simmer.  Cook onions until soft, about 10 minutes.  Add thyme.
Puree tomatoes in food processor until smooth.  Add tomatoes to onion mixture and bring to a boil.
Reduce heat, add the basil and simmer for 25 minutes.
Add salt as needed and freshly ground black pepper

Prepare Pasta

Cook pasta in boiling water per instructions. Drain well.  Add olive oil to prevent pasta from sticking together.

Prepare Sauce

Remove sausage from casings.  Cook sausage in a little olive oil until the sausage is browned.
Add 1/2 cup red wine and cook until almost evaporated.  Add the sauce to sausage mixture. Now add the sauce to the cooked pasta.  Garnish with Parmigiano Reggiano.

Makes a great dinner with a salad and garlic bread.
