A growing trend amongst busy families and working moms is the freezer meal – shop in bulk, cook or assemble recipes in larger quantities, and portion out into meals just the right size for your family.  Pop them in the freezer, and just defrost and do some quick cooking or assembly for a super quick and easy meal.   It’s a bit of work up front, but it pays off on those busy weeknights (or mornings) when there’s just no time to cook a whole meal from scratch!

There are a ton of options for different types of freezer entrees for breakfast, lunch or dinner, including plenty that use our favorite protein – sausage!   Here are some recipes we found interesting:

Sausage and Peppers

Roasted Red Pepper and Italian Sausage Baked Penne

Sausage and Spinach Quiche

Italian Sausage and Spinach Stuffed Shells

Spicy Sausage Breakfast Casserole

Collections of freezer recipes can be found online or in several books.  Here are a few:

Don’t Panic, Dinner’s in the Freezer

Fix, Freeze, Feast

Do you cook in bulk for freezing?  We’d love to hear your tips and tricks, and of course any recipes you would like to share!

Hard to believe the end of the year (decade, actually!) is almost here!

For you, what was the best part of 2010?

For us, the best part was YOU!  We’ve loved getting to know all our “fans” online, as well as folks across the country who are just discovering our chicken sausage.  We got this email today from Jason in Seattle, which is just one example.  It’s emails like this that really make us feel great about what we do:

This company is great, I recently tried your Italian Chicken sausage and wow, I found a sausage that I can have with my diet!  I recently lost 55 pounds and still need to lose 30 more, I used to love good bratwurst and all kinds of wurst.  But thank you for making a chicken sausage that I can eat, stay under 300 calories for a dinner with.  Tastes great too!

Thanks to all of YOU for a great 2010, and here’s to an even better, tastier and healthier 2011!  Have a safe and happy New Year!

This just made our day…

We LOVE getting emails from folks who enjoy our sausage, and today we got an especially wonderful one from Laura in Tacoma, WA that really had us all smiling.  It’s comments like these that really make us feel good about what we do and the products we offer.  Here’s what she had to say:

Greetings Isernio’s,

I just got done making my signiture “biscuits and gravy” for my family after a chilly morning of delivering newspapers. I substituted your “Chicken Breakfast Sausage Roll” and “Hot Chicken Breakfast Sausage” for the usual pork sausage that I have used for years.

The gravy was wonderful and full of flavor. Your sausage rolls cooked up great. I look forward to trying the other flavors in my pasta sauce and on homemade pizzas.

Two really important reasons why I chose your sausage was because of the short list of ingredients that I could recognize and even pronounce. The second reason was the fact that the price was exactly the same as the brand of pork sausage that I was planning on buying.

Thank you for a quality product that really was missing in the marketplace.  A healthy, delicious, afordable addition to our diet.

Just wanted to let you know that as a mother of four children who is trying very hard to make more healthy food choices for my family and I, these sausage rolls go along way toward providing the flavors that we love in our traditional recipes while being healthy.

Yours Truly,
Laura

Thanks SO much, Laura!  We’re glad we can be a healthy part of your favorite family recipes.

It’s that hectic time of year again when the kids are headed back to school, so who has time for a hot breakfast anymore?  Here’s a tip we’ve heard from a few Isernio’s fans who want to feed their families a hot and hearty breakfast in a hurry:  Pre-cook sausage links ahead of time, and have them in the fridge ready to brown in the morning.

Here’s how:  Just take breakfast sausage links out of the package and place them in a pan of boiling water.  Immediately turn off the heat and cover the pan.  Let the sausage sit in there for about 5 minutes.  Remove the sausage and store in the refrigerator (it will keep for at least 2-3 days).  Then, in the morning just brown however many sausages you need in a pan over medium heat, with about 1 tsp. of oil.  It just takes a few minutes, and you have a protein-packed addition to your daily breakfast.

Do you have any tips to make the breakfast rush a little easier?  We’d love to hear about them!
